Food Grade Tannase
Tannase, also known as tannin acyl hydrolase, is a hydrolytic enzyme that can hydrolyze tannic acid and other tannin - like compounds into gallic acid and glucose. It is mainly produced by microorganisms such as fungi like Aspergillus and Penicillium, and some bacteria. There is also a small amount of tannase in some plants.

It could effectively hydrolyze tannin to gallic acid and glucose, which can be widely used in the production of gallic acid and tannin processing of tea, coffee, fruit juice, red wine, beer, and other beverages.

Package and Storage

It should be stored under dry, ventilated and protected from light at 25℃, with a shelf life of 18 months from the date of production. The shelf life could be extended when refrigerated at 5℃.
