Discharge Platform

When fresh mangoes arrive, typically via a large truck, manual unloading can be incredibly challenging. To address this, we have developed a discharge platform equipped with water guns to unload fresh mangoes from trucks and transport them to the processing line using water. Additionally, the discharge platform serves the purpose of pre-washing fresh mangoes before processing begins.

Conveyor

This equipment is utilized to transfer fresh mangoes from the external area of the facility to the interior for further processing.

Washing

Prior to crushing, thorough washing of fresh mangoes is essential. We employ a combination of a bubble washing machine and a spray washing machine for this purpose. If stringent washing standards are required, additional washing stages can be incorporated. To enhance the cleaning efficacy, ultrasonic cleaning and ozone cleaning options can also be integrated. Following the bubble washing process, a brush and spray washing machine are utilized to ensure the mangoes are cleaned thoroughly.

Sorting

After washing, with the mango surfaces now clean, a visual inspection is conducted to identify and remove any defective mangoes.

Destoner

Operating at a speed of 1470 r/min, the mango destoner effectively crushes fresh mangoes, ensuring complete removal of mango cores. The cores are directed outside the facility, while the pulp is transferred to the subsequent processing stage.

Preheating

The pre-heater is employed to elevate the product's temperature post destoning, with an adjustable temperature range typically between 45°C to 85°C. This step aids in increasing the juice yield for the subsequent stages, while also safeguarding the color and flavor of the final mango paste.

Pulper and Refiner

Running at a speed of 1470 r/min, this machine utilizes centrifugal force to refine the product by passing it through a screen. Typically, a double-stage pulper and refiner setup is employed, with each stage featuring screens of varying sizes for optimal refinement.

Evaporation

A Vacuum Evaporator is utilized to concentrate the mango paste under vacuum and low temperatures, employing a Forced Circulation Vacuum Evaporator. This method preserves taste and nutrients due to the vacuum and low temperature conditions.

Sterilization

The tube-in-tube type sterilizer is utilized for sterilizing mango paste. The sterilization temperature and holding time are adjustable, allowing the mango paste to be heated to a high temperature (around 115°C) and held for a specified duration before rapid cooling to ambient temperatures. This process helps maintain the taste and nutrient content of the mango paste.

Aseptic Filling

The aseptic filling machine collaborates with the tube-in-tube type sterilizer in a closed cycle. Before production commences, the cycle undergoes full sterilization to ensure an aseptic environment. Steam is used to protect the filling cavity, guaranteeing an aseptic filling environment.
