Disodium hydrogen phosphate contains two sodium atoms and one hydrogen atom, so it is also called monosodium phosphate, Disodium Phosphate/Dibasic Sodium Phosphate.
Disodium hydrogen phosphate is divided into anhydrous and hydrate. The anhydrous is a white powder with the molecular formula Na2HPO4. It is hygroscopic and can gradually become heptahydrate when placed in the air.
The dihydrate is a colorless to white orthorhombic or monoclinic crystal. When heated to 34-35°C, it dissolves in crystal water. When placed in the air at room temperature, it loses about 5 mol (25%) of crystal water; when heated to above 240°C, it becomes sodium pyrophosphate. It reacts with carbon dioxide in the air to form sodium dihydrogen phosphate and sodium bicarbonate.
Both the anhydrous and dihydrate are easily soluble in water, and the aqueous solution is alkaline, insoluble in ethanol. (The aqueous solution of sodium dihydrogen phosphate MSP is acidic, and the aqueous solution of disodium hydrogen phosphate DSP is alkaline).
In the food industry, it is used as a quality improver, pH regulator, nutritional supplement, emulsifier, dispersant, fermentation aid, binder, etc.
