ST150 Dough stretcher

ST150 Stretching Instrument is a reliable testing instrument for measuring the gluten strength of flour and the improvement effect of flour improvers (gluten enhancers). It detects the elongation resistance and elongation length of dough, analyzes the collected data by computer, and draws an elongation chart to calculate the dough extensibility, elongation resistance, curve area, tension ratio and other indicators, in order to evaluate the quality of flour and the improvement effect of flour improvers.

The analysis of the extension curve of different awakening time can guide the reasonable addition of flour improver, the production of bread, Mantou and other foods, and determine the appropriate awakening time.

The measurement of dough extension resistance using a tensile tester abandons traditional mechanical lever force measurement and mechanical drawing mechanisms. Instead, digital signals are collected and plotted by a computer, and the data is analyzed. The measurement is precise, accurate, reliable, and has good reproducibility of experimental results. Based on the experimental analysis results, the quality of flour can be determined, and the improvement effect of improvers in flour can be determined or analyzed to guide the amount of improvers added.

It is precisely because this testing instrument abandons the mechanical lever force measurement and mechanical drawing mechanism commonly used in traditional instruments. The measurement of the resistance to elongation of the dough is converted into digital signals by a dedicated digital sensor, and collected, drawn, and analyzed by a computer. Therefore, the test results are more accurate, reliable, easy to operate, and more economical.
