The vacuum system is in a negative pressure state relative to atmospheric pressure, and its absolute pressure is lower than atmospheric pressure. Food processing in this relatively hypoxic state can alleviate or even avoid the hazards of oxidation, such as fatty acid loss, enzymatic browning or other oxidative deterioration. The operation under vacuum can effectively avoid the problem of high temperature treatment of the deterioration of the frying oil and the generation of harmful substances such as acrylamide.
