(1) Temperature

Frying temperature is controlled by vacuum degree. The general temperature is about 90℃

(2) Vacuum Degree

In general, it is controlled within 92.0~98.7kPa(69~70cmHg). The boil point of pure water is about 40℃.

(3) Pretreatment before frying

Pretreatment mainly includes: moltose immersion, blanching and freezing.

The purpose is to inactivate the enzyme and increase the strength of product's structure.
